Slow Cooker Keto Carnitas

Hey all! Sarah here..10425029_10101827987849819_1677664584284004725_n I love carnitas and my slow cooker so this was a great easy way to get my Mexican food kick without all the carbs.

What you will need:
~ 2 1/2 lbs of pork butt (or shoulder)
– 5 cloves of fresh garlic (smashed)
– 1/2 tbs of oregano
– 2 limes (1 quartered for slow cooker, another for garnish)
– fresh cilantro (garnish)
– 1/2 orange – quartered
– 1 tbs salt (or more to taste)
– 1/2 lbs of lard
– 1 onion – quartered
– jalapeno – chopped
– black pepper
1. Cut the pork butt into 2x2inch cubes (You can shred the meat after cooking)
2. Put all of the ingredients into the slow cooker and mix with a wooden spoon. Leave the cooker on low for 5 hours.
3. Take the pork out and put it on a foil lined baking sheet, drizzle with olive oil if desired.
4. Put the pork under a broiler for 3-5 minutes. This is a step where you need to keep a close eye on the meat because it will go from being caramelized to burnt very quickly. I turned the meat over to get a nice caramelization on both sides.
5. Salt to taste and add freshly chopped cilantro and freshly squeezed lime over the top

Extra Tips
– Add salad greens, sour cream and cheese and chopped onions for a carnitas salad.
– Get some low carb torillas and make tacos!
– The lard might sound scary but it is needed for this recipe. The meat will be very dry if left out.
